Pulled pork. Just made it last night actually.
1 Boston Butt roast (no need to splurge on a picnic roast, you’re shredding the meat off the bone anyway)
1 Onion
1/2 Bottle Cheap BBQ sauce
Slice onion, put on bottom of crock pot. This caramelizes it, adding flavor and prevents the roast from burning.
Put roast on top
Pour on BBQ sauce
Cook on high for 4-5 hours, then turn on low for another 4 hour or so. This will toughen the outside and seal flavor in
You can also cook on low for 8-9 hours, but I have the free time and am usually in the area to flip the switch after a few hours.
Shred with two forks across the grain. The roast will be tasty without BBQ sauce the first night, but I usually refrigerate mine up to a week, and just nuke it when I need it, then add some good homemade BBQ or mustard based sauce, and some french fried onions like those found in a casserole.
Simple!

There’s so many, you can’t go wrong by trying lots on the crockpot365.blogspot.com blog (which is SO made of win). Our favorite here is Stroganoff.
Crock-Pot Stroganoff
1-2 lbs of stew meat
1 can of Campbell’s Condensed French Onion Soup*
Cook on low for 4-6 hours. When done, stir in some sour cream or cream cheese. Serve over Egg Noodles. YUM!
*I used to make this with 1 can of French Onion Soup, 1 packet of Onion Soup Mix, 1 can of Golden Mushroom Soup and a can of sliced mushrooms. I edited it down to one can of condensed soup (golden mushroom or french onion) for cost savings.

The favorite in our house is my beef stew.
1 roast – however big you need it
cut up potatoes – largely diced
1 pkg peeled baby carrots
1 pkg beef stew mix (I usually use the store-brand but McCormick’s has them, too)
Put the ingredients in the crockpot in the order they are listed down to the carrots. Add salt and pepper. Open the packet of beef stew mix and pour into a plastic bowl. I usually use a medium Rubbermaid one. Pour water into the bowl almost to the top. Stir up the mix and then pour it over the ingredients in the crockpot. Cook on low for 6 to 8 hours. This makes a soupy version. Just use less water if you’d like more of a roast than a stew.

2-4 chicken breasts
1 container store-bought fresh salsa/pico de gallo

Combine all ingredients, cook on low all day, and then use a fork to stir and shred the chicken. Serve with tortillas and choice of toppings!
