I am always looking for yummy ways to get my boys to eat more vegetables. These Crispy Zucchini Parmesan Chips are a perfect snack that is not only high in flavor but also a great way to mask an otherwise not kid friendly vegetable. We love dipping in an easy Greek Yogurt Ranch dip or even simple Marinara sauce for and added zip of flavor!
CRISPY ZUCCHINI PARMESAN CHIPS
INGREDIENTS
- 2 Zucchini
- 1/4 cup grated Parmesan
- 1/4 cup dry Bread Crumbs
- 1/4 tsp Salt
- 2 tbsp Olive Oil
- 1/4 tsp Pepper
- Preheat oven to 450.
- Spray baking sheet with non-stick spray.
- Cut zucchini into 1/4″ slices.
- Combine parmesan, bread crumbs, salt and pepper in a small bowl.
- Dip zucchini into oil then toss in crumb mixture and place on prepared sheet.
- Bake 30 minutes or until crisp and brown.
If your family likes their chips a little thinner you can easily use a mandolin slicing tool to cut the zucchini paper thin. They will crisp more this way and be better for scooping dip up with. No matter how thick or thin you slice them, these Crispy Zucchini Parmesan Chips are a perfect treat for St. Patrick’s Day parties, your next big game day or just because for the kids after school!
