Chicken Tostadas recipe with Rosarita salsa– I love finding new Mexican food recipes! Our 2 year old son LOVES Tex-Mex food, so when Mom Central recently asked us to try the new Rosarita salsa, we jumped at the chance! Ever since our first son began eating solid foods, he has loved Mexican foods, and it’s his favorite food to this day. So I knew he would be a great critic of the new salsa, lol. My husband and I love Mexican food too, so I was excited to see how we would like the salsa as well!
For those of you not familiar with Rosarita – Since the 1940’s, Rosarita has offered authentic Mexican-style refried beans and become the number one selling brand in the United States. Now, they have added a Rosarita salsa line, with authentic flavors that range from mild to hot- Mild Salsa Mexicana, Medium Salsa Verde and Hot Salsa Taquera. As of right now, the new salsa will only be available in four cities — LA, Dallas, Phoenix, and Denver — at select Walmart and grocery stores. I absolutely loved the Salsa Verde. The Hot Salsa Taquera was okay, but then again, I’m not a huge fan of taco sauce. However, my 2 year old loved dipping his tortilla chips in it, even though it was quite spicy! The mild salsa was great as a sauce on the enchiladas we made, and also great as a “dip”. Now my only problem is we don’t live in any of the cities where this salsa is available, so how on earth am I going to buy more of this stuff? Dallas, here we come!!! LOL.
And now, the recipe I promised you for Chicken Tostadas:
Ingredients
* 2 cups of canned Rosarita refried beans
* Rosarita Salsa
* 2 packages tostadas (6-inch diameter)
* 3 cups shredded cooked chicken
* 4 cups shredded iceberg lettuce
* 1 cup Queso Fresco (fresh Mexican cheese)
* 1 large, firm ripe avocado, pared, pitted, sliced
* ½ cup sour cream
Directions
* Heat refried beans
* Spread onto tostadas
* Apply thin layer of shredded chicken
* Top with thin layer of lettuce
* Top with salsa
* Sprinkle cheese/garnish with cream and avocadoes
