INGREDIENTS
- Store bought yellow cake mix, plus ingredients on the box
- Whipped Cream (see below)
- Fresh Strawberries
DIRECTIONS
Prepare the cake according to the box instructions and bake in a sheet pan (the cake will be thin). Let the cake cool completely.
To Make the Strawberry Syrup
INGREDIENTS
- 1 cup strawberry preserves
- 2 tablespoons water
DIRECTIONS
In a small sauce pot over medium heat, combine the strawberry preserves and water. Bring to a low boil stirring frequently until the mixture is thinned out. Remove from the heat and let set while you prepare the whipped cream.
Homemade Strawberry Whipped Cream
INGREDIENTS
- 4 tablespoons sugar
- 2 cup heavy cream
- 2 teaspoon strawberry extract
- Red food coloring
DIRECTIONS
While the cake cools, place a metal mixing bowl and your beaters in the freezer. Remove and add the sugar, strawberry extract, and cream to the bowl. Add a few drops of red food coloring to tint the cream pink. With your mixer on low, beat the cream until it thickens and you have stiff peaks.
TO ASSEMBLE
Use the top of your mason jar as a template, and cut the cake into round circles.
Add some of the whipped cream to the bottom of each dish. Layer a round piece of cake on top of the whipped cream, then spoon over some of the jam mixture. Add a second piece of cake. Top with whipped cream and fresh strawberries. Repeat with remaining dishes. Store in the refrigerator and serve cold.
