You know that I am the Queen of easy recipes or semi-homemade recipes and these Easy Carrot Cake Cookies are both. They remind me of my favorite cake but much easier to handle since they don’t require a plate and fork. Using a cake mix adapted for this recipe they are one of my favorite last minute treats and perfect for whipping up this week for Easter treats! You can serve alone or you could make an extra special treat by topping with your favorite cream cheese icing for a special cake like cookie treat!
EASY CARROT CAKE COOKIES
INGREDIENTS
1 box of Betty Crocker Carrot Cake Mix
2 eggs
1/2 cup oil
1 cup of raisins
DIRECTIONS
- Preheat oven to 350.
- Line a cookie sheet wih parchment paper.
- Mix cake mix, eggs and oil for a couple of minutes.
- Fold in raisins.
- Put tablespoon sized chunks of dough onto prepared sheet and press down slightly.
- Bake 12 minutes or until lightly browned.
