With summer almost here and gardens beginning to bloom we look forward to a bumper crop of fresh vegetables to enjoy. This Crock Pot Stuffed Pepper Soup is one of my favorites to make when I have an excess of bell peppers in my garden or just when we find them on sale at a great price. Not only is it a hearty soup that will satisfy even our pickiest eaters it is super easy to throw in the crock pot and forget for a few hours.
CROCK POT STUFFED PEPPER SOUP
INGREDIENTS
2 lb Ground Beef
1 Onion chopped
1 tsp Minced Garlic
2 quart Water
28 oz Tomato Sauce
28 oz Diced Tomatoes
1 cup uncooked Rice
2 cup chopped Peppers
1/4 cup Brown Sugar
2 tsp salt
1 tbsp Beef Base
2 tsp Black Pepper
DIRECTIONS
- Brown Ground Beef and drain.
- Add to slow cooker with all other ingredients and cook on low 8-10 hours.
This Crock Pot Stuffed Pepper Soup is perfect as a stand alone dish but we admittedly add the extra carbs in some nice crunchy toasted bread alongside it. It also pairs beautifully with a crispy grilled cheese sandwich for a welcoming warmth that reminds you of childhood.
