Sometimes we find ourselves either strapped for time to make lunch, or like myself finding great deals on breads or luncheon meats that are at deep discounts but need to be used quickly.  These Great Sandwiches To Freeze In Advance are a result of both of those issues.  Creating a stock of easy to grab and go lunch ideas is great for not only the school year meals for your kids, but for yourself and your spouse year round.  If you are like me and work from home, it will also help you during the summer months when you may want to get as much done in the morning hours so you can spend the afternoons with the kids.  Being able to have them grab a quick sandwich from the freezer on their own will save you time.

GREAT SANDWICHES TO FREEZE IN ADVANCE

Peanut Butter and Jelly– Prepare as usual

Ham or Turkey and Cheese– Pile on meat and cheese, placing condiments between meat and cheese instead of directly on the bread.

Tuna Fish– For best results, butter both side of bread completely, to create a barrier. Spoon on desired amount of tuna salad on one piece of bread, top with the other.

Chicken Salad- Make just as you did the tuna salad, buttering both sides of bread. Do not include items such as; grapes, apples, or celery-as they do not freeze well.

Meatball Sub– Freeze precooked meatballs, sauce and cheese in a freezer safe bag or container. The morning of heat in the microwave for 30-40 seconds at a time until heated through. Place in a prepared Thermos ( you do this by boiling water, pouring into thermos, and closing the lid, allow to sit for 10 minutes, dump out water, and fill with hot food, should stay warm for 4-5 hours. Pack bread in a separate bag, don’t forget a plastic spoon or fork for serving!

Meat & Cheese Wraps – leave the veggies off but warp your favorite ingredients into a flour or whole wheat tortilla and wrap well, label and freeze.

Pita Pocket Pizzas – Stuff with a spoon of pasta sauce, slices of pepperoni, sliced or shredded cheese and any other traditional pizza toppings.  Wrap, label and freeze.

Chicken Cordon Bleu Sandwich – Using a crusty bread (think French bread or baguette), spread a thin layer of honey mustard on both sides and layer grilled chicken, sliced ham and swiss cheese for an easy to reheat “gourmet” sandwich.

No matter what your favorite sandwich may be, almost any combination will freeze well.  These great sandwiches to freeze in advance will help stretch your budget of money and time.
