Zesty Ranch Zucchini Chips

Baked Zesty Ranch Zucchini Chips

Looking for a tasty snack without reaching for a bag of greasy potato chips? These Zesty Ranch Baked Zucchini Chips are delicious and relatively healthy making them a great side dish for dinner or as a yummy snack. They are easy to make and are a great item to let the kids practice their kitchen skills! They get to stir, dip, and place on a pan, giving them a taste of cooking.  As a side dish for a family of 4, I would double this recipe. If the kids find it too spicy, simply leave out the pepper flakes. These baked zucchini chips are a great healthy snack alternative for your family! Quick and easy! Give it a try! Ingredients for Zesty Ranch Zucchini Chips:

1 Zucchini

1 packet dry ranch mix (choose gluten free if needed), or use our homemade version Dry Ranch Mix

1/4 tsp. red pepper flakes

1/2 tsp. Paprika

1/4 cup italian breadcrumbs (substitute gluten free bread if desired)

1 egg

 

Directions:

Preheat oven to 400 degrees, line a baking sheet with parchment paper or a silpat mat.

Slice zucchini into 1/8″ slices.

Mix 1 egg well with a fork.

In a separate dish combine ranch, red pepper flakes, paprika, and breadcrumbs.

Dredge chips first in egg wash, then in breading/ranch mixture-coating both sides well.

Spread out on prepared baking sheet.

Bake for 12-15 minutes, until golden brown.

    something new for our family to try. we don’t typically enjoy zucchini [out of bread, that is], so this might be a good way to try it!
