Baked Zesty Ranch Zucchini Chips

Looking for a tasty snack without reaching for a bag of greasy potato chips? These Zesty Ranch Baked Zucchini Chips are delicious and relatively healthy making them a great side dish for dinner or as a yummy snack. They are easy to make and are a great item to let the kids practice their kitchen skills! They get to stir, dip, and place on a pan, giving them a taste of cooking.  As a side dish for a family of 4, I would double this recipe. If the kids find it too spicy, simply leave out the pepper flakes. These baked zucchini chips are a great healthy snack alternative for your family! Quick and easy! Give it a try! Ingredients for Zesty Ranch Zucchini Chips:

1 Zucchini

1 packet dry ranch mix (choose gluten free if needed), or use our homemade version Dry Ranch Mix

1/4 tsp. red pepper flakes

1/2 tsp. Paprika

1/4 cup italian breadcrumbs (substitute gluten free bread if desired)

1 egg

 

Directions:

Preheat oven to 400 degrees, line a baking sheet with parchment paper or a silpat mat.

Slice zucchini into 1/8″ slices.

Mix 1 egg well with a fork.

In a separate dish combine ranch, red pepper flakes, paprika, and breadcrumbs.

Dredge chips first in egg wash, then in breading/ranch mixture-coating both sides well.

Spread out on prepared baking sheet.

Bake for 12-15 minutes, until golden brown.

Dinner time is always a challenge.  I try to find Quick and Easy dishes to make after working all day and dreading slaving over a hot stove.  These Quick and Easy Tacos are so easy to make and take literally 7 minutes from start to finish.  Best of all these are kid friendly and make great left overs as well.  These Quick and Easy Tacos are filled with delicious ground beef, fresh tomatoes, fresh lettuce and a dallop of sour cream for the ultimate dinner experience.  Who doesn’t love a easy dish right?  This is something you can whip up several times a week and it’s a great way to serve your family something delicious and fast.  Best of all these tacos can be topped with any of your favorite ingredients to make them suitable for your family.  Enjoy.

Quick and Easy Tacos

What you need:

  • 6″ Flour Tortillas
  • Ground Beef
  • Tomatoes
  • Lettuce
  • Sour Cream
  • Skillet

 

Place your skillet on the stove over medium heat and place your ground beef in the skillet.  Allow to cook for about 2 minutes on one side and than flip over.  Cook it until it’s browned all the way through this took about 5 minutes for me.  Now lay your flour tortillas on a plate and top off with your delicious cut tomatoes, lettuce and a nice spoonful of sour cream.  Fold it up like a taco and enjoy.

Cheesy Broccoli Bake

It’s time again for our Using the Garden Veggies Summer Series! This time we have a delicious Cheesy Broccoli Bake for you! Shake up your side dishes and try something with more flavor than a traditional plate of broccoli with butter.  Whether you need a side for the family dinner or a tasty contribution to the potluck, this one is a winner! It’s full of flavor and texture. Even kids who normally turn their nose up at broccoli may end up cleaning their plate. Mix it up by making it with half broccoli and half cauliflower, or try your favorite shredded cheese blend and create a new family favorite. Yum!

 

Ingredients:

5-6 cups frozen broccoli

10.5 oz can cream of chicken soup

1 ½ cups shredded cheddar cheese

½ cup cream cheese

½ cup grated parmesan cheese

½ cup Italian bread crumbs

2 Tbsp. butter, diced

1 ½ tsp. garlic salt

1 tsp. black pepper

 

Directions:

Preheat oven to 350°

Grease an 8×8 pan well.

Combine broccoli, soup, cheddar, cream cheese, parmesan, garlic salt, and pepper in a large bowl. Stir to mix well.

Transfer to prepared pan.

Top with diced butter and bread crumbs.

Bake for 35-40 minutes until heated through and topping is golden.

So you wake up in the early morning and the kids are hungry.  You browse the cupboards and realize there is nothing to eat and you have no pancake mix on hand.  Have no fear! I’m going to show you how to make very easy 3 Ingredient Pancakes.  These 3 Ingredient Pancakes contain a ripe banana, eggs and cinnamon and they turn out delicious every single time.  And yes, they are gluten free! Since these are so easy to make it’s a great way to get the kids involved in breakfast meals as well.  Enjoy!

3 Ingredient Pancakes Ingredients (Gluten Free)

What you need:

  • 1 Ripe Banana
  • 2 Eggs
  • 1 Tsp. Cinnamon
  • Potato Masher
  • Coconut Spray or Pam Spray

Directions:

Grab your ripe banana and cut it up into a bunch of slices.  The thinner the slices, the easier the mashing process will be.  Place your banana slices into a bowl, and crack 2 eggs. Top off with your cinnamon.  Grab your potato masher and start mashing up everything until it’s blended together.  I mashed until the banana pieces were really small and the eggs and cinnamon were mixed thoroughly.  Grab a frying pan and place on the stove over medium heat and spray with your nonstick spray.  Pour or spoon your pancake batter into the pan and allow to cook for about 2 minutes on the first side.  Flip the pancake with a spatula and allow the other side to cook about 1.5 minutes.  Remove from the frying pan and place on a plate.  These are so delicious and ready to eat.  Feel free to top off with some delicious ripe bananas and a little sprinkle of cinnamon. YUMMY!

Quick Easy Broccoli Cheese SoupWhen it’s time for dinner, it’s always a struggle to know what to make for your family.  We all lead very busy lives and sometimes the idea of slaving over a hot stove after a long day just isn’t ideal for anyone.  We know you all love Quick and Easy dishes, so here is adelicious Quick Easy Broccoli Cheese Soup that is perfect for a quick ready-to-eat dinner.  Not only is this Quick Easy Broccoli Cheese Soup super easy to make, but it takes a total of 10 minutes or so until it’s on the table for your family.  It’s a delicious lunch, snack or dinner and very kid-friendly too. It may become one of your favorite go-to recipes, and it’s a great way to get your kids to eat some broccoli! 🙂

Quick Easy Broccoli Cheese Soup

What you need:

  • 1 Bag Frozen Broccoli Florets
  • 1 Can Cheddar Soup
  • 1 Can of Milk
  • Shredded Cheddar Cheese (Optional)

Grab a cooking pan and place on the stove over medium heat.  Pour in your can of cheddar soup mix, followed by a can of milk. Let simmer for about 5 minutes.  Be sure to stir occassionally. This combines the cheddar mix and milk together.  While your soup mix is cooking, grab your frozen florets and place them in a microwave safe bowl. Cook them in the microwave for 7 minutes, or until they are cooked.  Once they’re completed cooking (CAUTION THEY WILL BE HOT!), carefully pour the broccoli into your Cheese Soup. Allow them to cook together for about 2 minutes.  Pour into your serving bowls, and garnish with shredded cheese if you wish.  Best when served warm.  Enjoy!

Quick and Easy Raspberry Mousse: Simple Make Ahead Dessert

Quick and Easy Raspberry Mousse

Desserts are such a delicacy, and recently we made a delicious batch of a Quick and Easy Raspberry Mousse. Raspberry Mousse is a light and fluffy dessert filled with fresh raspberries that will melt in your mouth. All you need is 15 minutes of free time and this Quick and Easy Raspberry Mousse will be awaiting for you. Perfect for an after dinner dessert or a great treat for a party or event. You can also use it as a cake filling too! Yum!

Quick and Easy Raspberry Mousse

What you need:
• Double Boiler
• One bar Bittersweet Chocolate
• 2 Tbsp Sugar
• 1 Cup Heavy Whipping Cream
• 1 Tbsp Vanilla
• Electric Mixer
• 1 cup Raspberries (fresh)

Grab your double boiler and add water to the bottom portion. Place on your stove top on high and wait for the water to come to a boil. Once water comes to a bottle put on top portion of double boiler and pour in ¼ cup of heavy whipping cream. Stir the heavy whipping cream frequently so it doesn’t stick to the pan. Once it starts to boil a bit remove the top portion of the double boiler from the heat and pour in your chocolate bar. It works best if the chocolate is broken into several pieces. Stir the chocolate with the heavy whipping cream until it’s smooth and melted. Place the top portion of the double boiler back on and let it sit there. In your electric stand mixer pour in the rest of your heavy whipping cream and crank up the speed to high until it forms soft peaks. Once the soft peaks start to form pour in your sugar and vanilla and continue to mix on high until stiff peaks form. Once the stiff peaks form, take a spoonful of your whipped mixture and fold it into your chocolate sauce. Now pour the chocolate sauce into your whipped mixture, add in your raspberries and mix it well. Pour into a smaller bowl and place in the freezer for 15 minutes to set. Remove from fridge and plate into small bowls or glasses and top off with fresh raspberries and your Quick and Easy Raspberry Mousse is complete.

Quick and Easy Pork Chops

Quick and Easy Pork Chops

Being a busy working mother of little ones makes dinner time stressful.  I always like to come up with meal plans that are quick and easy, and these Quick and Easy Pork Chops are my all time favorite go to meal.  In under 30 minutes, I can complete these delicious Quick and Easy Pork Chops! I absolutely love that they’re kid friendly.  With just a few products you most likely already have on hand, you’re on your way to a delicious home cooked meal. After These are also great to freeze and re-heat for a quick meal later, so make up a double batch and freeze the extras! YUM!

Quick and Easy Pork Chops

What you need:

  • 10 Full-Size Pork Chops
  •  1 Cup Flour
  • 4 Tbsp Montreal Steak Seasoning
  • 1 Cup Vegetable Oil
  • 1/2 Box Bread Crumbs
  • 4 Eggs
  • Frying Pan

Grab 2 medium sized mixing bowls and grab all your ingredients.  In the first bowl, pour in your flour, montreal steak seasoning and bread crumbs and mix it well.  In your other bowl add in your eggs and mix them well until the yolks are beaten.  Grab your pork chops and soak them in the egg mixture, then place them into the breaded mixture and cover both sides fully.  Grab your frying pan and place it on your stove over medium heat.  Pour in your vegetable oil and and allow to get hot before placing your pork chops into the oil.  Once the oil is heated carefully place in your pork chops, and be very careful of splattering oil.  Place lid on top and let cook for 3 minutes on the first side, flip them and let cook for another 3 minutes on the opposite side.  Remove from the oil and let sit on a plate to rest.  Cut into the middle to ensure all the pink is gone and the pork chops are ready to be eaten.  If you see any pink, cook the pork chops longer until all the pink is completely gone. 3 Ingredient Lemon Bars: Easy Lemon Bar Crumble Recipe

3 Ingredient Lemon Bars

One of my fondest traditions growing up was making 3 Ingredient Lemon Bars with my mom.  There is something so savory and sweet about Lemon bars and I love that they are so simple to make.  Most of the ingredients you should have in your pantry already and this can be made (and ready to eat!) in less than an hour.  A perfect dessert for a home meal, party or event.

3 Ingredient Lemon Bars

What you need:

  • 1 box lemon cake mix
  • 1 stick unsalted butter
  • 1 can lemon pie filling

Directions:

Preheat your oven to 350 degrees.  Grab a medium size mixing bowl and pour your cake mix into it.  Grab your stick of butter and place it in a microwave safe dish and place in the microwave for 30 seconds.  Placing the butter in the microwave allows it to soften up so it blends with the cake mix easier.  Pour your softened butter into your cake mix and stir it well with a spoon.  Stir it until the butter and cake mix forms into a clump.  Grab a 9 x 13 baking dish and spray it with a cooking spray.  Pour your cake mixture into your baking dish and press down firmly to form the bottom of your lemon bar crust.  Save about ½ cup of your cake mixture to form your lemon bar crumble topping.  Now grab your lemon pie filling and pour it on top of the cake mixture and smooth it out using a spoon or a knife.  Take the remainder of your cake crumble and sprinkle it on the top of your lemon pie filling.  Pop your lemon bars into the oven for 28 minutes.  Remove from the oven and let cool for 5 minutes.  Slice your lemon bars and place on a plate and enjoy.

Brownies are one dessert my entire family loves to indulge in on a weekly basis.  These Quick and Easy Brownies are so easy to make and a great way to involve the kids in the baking process. These Quick and Easy Brownies are delicious and have just the right amount of gooey chocolate goodness. Whether you’re hosting a birthday party, event or just a fun girls night in these Quick and Easy Brownies are the perfect choice for dessert and are fast and simple to make.  I really hope you enjoy making these as much as I did.

Quick and Easy Brownies Recipe

  • 12 ounces Mini Chocolate Chips
  • 1 Cup Sugar
  • 2 Eggs
  • 1/2 Cup Egg Whites
  • 1 Stick Butter
  • 1 Cup flour

Preheat oven to 375 degrees.  We need to combine our butter and our mini chocolate chips into a microwave safe bowl to create our chocolate brownie base.  This part is so easy and makes your entire kitchen smell like a delicious amount of chocolate.  Place in the microwave for 1 minute and remove, stir and return to the microwave for another minute.  Once the chocolate and butter is melted it’s time to add in your sugar, eggs, egg whites and flour and mix until everything is well blended.  Once it’s well blended, it’s time to pour your brownie mix into a 9″ x 9″ baking pan.  I really recommend spraying some non-stick cooking spray on before you pour your mix because it will make removing the brownies so much easier.  Place in the oven for 30 minutes and remove. Place a knife or toothpick in the middle of the brownies and if the knife / toothpick comes off clean, then they’re done.  If the mixture comes off on the knife / toothpick, place back in the oven for an additional 5 minutes.  These Brownies really are so quick and easy to make, and they’re delicious.  Best of all they’re affordable since you already have most of the ingredients on hand anyways.
